A handful of food items travel well and genuinely taste like the trip once you're home, beyond the standard fridge magnet.

Pantry staples

  • Thai curry pastes (red, green, massaman) — vacuum-packed versions travel well and outperform most curry pastes available abroad
  • Dried chilli flakes and whole dried chillies
  • Fish sauce and oyster sauce, well-sealed in checked luggage rather than carry-on
  • Tamarind paste and palm sugar — the two ingredients that most consistently make a home-cooked Thai dish taste "off" without them

Snacks

  • Dried mango and other dried fruit
  • Thai-style seasoned dried squid or fish snacks

What not to bring

Fresh durian is restricted or banned on most airlines and in many countries' customs rules due to both smell and biosecurity concerns — stick to processed durian snacks (chips, candy) if you want to bring the flavour home without the logistics problem.

A note for Australian travellers

Australia's biosecurity rules are stricter than many countries' when it comes to raw or unprocessed food — fresh or dried fruit, raw nuts, seeds and some spices can be confiscated or require declaration on arrival, even if they cleared customs fine elsewhere on the way home. Commercially packaged, sealed snack products (curry pastes, dried mango, roasted cashews) generally cause far fewer issues than anything homemade or loose — when in doubt, declare it on your incoming passenger card rather than risk a fine for non-declaration.
